Fried Fish With Fried Plantain Chips

Butter or cod fish seasoned in a blend of seasonings and spices(Basil, Eschallot, garlic, onions, fine thyme, ginger and pepper, all blended), leave over night or for about 4 hours. Batter the seasoned fish with flour, bread crumbs, salt and black pepper, fry until brown and crispy.
For plantains use green to half ripe plantains, seasoned in onion and cayenne powder, fry until yellow, serve with ketchup, mayonnaise, mustard and hot sauce(optional)
