KFC White Meat Chicken Salad

Cut up mild crispy breast mix with mayo, chopped peppers, celery, and relish. Also add sliced boiled eggs.

This idea was thought up when a local KFC added 3 breast pieces to a 20-piece bucket when the request was for all dark meat. We did not want to waste the unwanted chicken so the wife came up with the idea to make some sort of chicken salad. Turned out real good.
