Fry burritos because they're flakey. Throw some cheese on top, add some lettuce or tomato around it in a bowel, and you're all set. Adding the option to fry menu items would increase revenue without significantly increasing cost. Frying burritos, unlike frying the regular tortillas causes the oil to darken much faster, needing more frequent changes, but the overall cost is small.
testing out prices $1 to upgrade any burrito to a fried burrito would be a good price to test demand.
