I think you should offer Falafel platters or sandwiches.This is a great vegetarian alternative and is easy for fast food prep. Falafel are already frozen, pitas are easy hummus or tahini come in packages and you already have salad makings.
Not only is the great for vegetarians, but also update preferences for mid eastern food. You could grab the market here...
